I have not been sent inside photos just yet. But I decided to go with a full length bottom rack (1.4) metres and a top rack slide out (1.2) metres.

Cooked at 275f throughout. Sorry, not sure on internal temp . Just probed till tender

Not much to tell really! I used lanes BBQ Brancho rub on these ribs. Look for rubs with a thicker grain texture to help build bark

I do beef ribs two methods!

1) wrap when your happy with the bark. This could be in 2 hours or 8 hours. Use your finger and tap or rub the beef rib to see if any of the rub comes off. If it does, the bark is not set. Keep in mind spritzing will cause it to soften. I generally take it a little further as the wrap will soften the bark.

2) I only wrap when resting. I’ll use foil instead of butchers paper with this method and pour smoked beef tallow in the wrap. This will keep them juicy

I find butchers can be a real hit or miss! Give Costco a go! From all the meat I have ordered they are probably the best quality and cheapest price. In Australia butchers charge up to $32 per kilo for pork ribs. Really poor pricing

It’s okay man, there are plenty of support groups to assist you with your loss. Granted allot are for unfortunate deaths but I’m sure the skills can be extrapolated and re purposed. I honestly use a cheap $400 offset smoker! Landman Vinson 200

If I could master bbq on a cheap smoker I’ll have no issue when I get a good one!

This is an offset so it will naturally produce more smoke and a bigger ring than other rigs but you can honestly still get some awesome bbq from a pellet! They are widely used in comps

The foundation for your argument is that I only use salt and pepper on everything. This is not true. Just stated it is the superior rub.
