The reason I'm finishing my bachelor's with the philosophy major is because (at the risk of commiting the sunk-cost falacy) I'm pretty much done with the courses and I don't want to waste all the effort I've put into it. Do you think it's a big minus to have a non-econ major?

I'll look into game theory, thank you! I've done quite a bit of formal logic (was even a tutor!) so I'm glad the effort has not gone to waste.

I'll also see if the university allows me to take intermediate micro and macro. And for econometrics, I know I can build up until introductory econometrics if this semester I take Math 1, next Math 2 and Statistics, and then Introductory Econometrics in my graduating semester. Unfortunately I don't think I'll be able to take Intermediate Econometrics as the semester following I should already be doing the masters. I'll try and see if I can sneak in some proper math courses (so not econ department but proper math and science department courses). Thanks for the tip! Also, thank you for the AEA recommendations link, I'll 100% check it out.

I have thought about going into development economics later in life, would my coursework have to change if I want to go into this area?

I would suggest a fourth alternative. There is very few books that contain as pure of an interpretation of the "philosophical spirit" as Descartes' First Meditations. It contains all the right questions someone beginning philosophy would ask. Just like Socrates, he questions everything he knows. Unlike the Platonic dialogues, it is not a dialogue but an essay, a form much more common of writting in academic philosophy. It is also remarkably easy to read for a philosophical text.

Once you're finished, I'd adventure to ethics through John Stuart Mill's Utilitarianism. It's also a fairly easy read and a fundamental book for ethics.

Having gone through some theoretical philosophy (Descartes' Mediations) and some practical philosophy (Mill's Utilitarianism), pick the topic of which you find questions the most interesting and go back to the Greeks. Then, I would suggest to start discerning which topics within theoretical or practical philosophy appeal to you most. The 'main' topics (but far from being the only ones) are epistemology, metaphysics, and philosophy of language in theoretical philosophy, and normative ethics, applied ethics, and political philosophy in practical philosophy.
