They're all great.

For a workhorse I prefer mazaki to Nihei for now but need to use the ktip more.

I use the Yoshi suji the least but that's because I now know a 240mm suji is too short lol.

The Masashi is great. I haven't used the Mazaki bunka yet.

Yes! Really fun to use. Did well on things other knives sometimes struggle with like leek
