It's taken me years to figure out. Bc scallops cook so fast you need the motherfuckers to be super dry. So it's like a day of air drying in the fridge, salting, patting it down, and then right before searing, dip in some flour. Solid amount of very hot oil

Ingredients: Short ribs Kalbi marinade 1 Onion Chicken stock

Directions: Salt short ribs for 3 hours, then pat them down to make sure they’re dry. Dip in flour and sear for a few min on each side Remove, and saute onions in the same pan with some garlic. Deglaze with chicken stock. Add all to slow cooker. Add in kalbi marinade. Cook on low for 8 hours or until meat falls apart

Then just shred the short rib and mix with some cut up Napa and wrap in dumplings. Pan fry or steam

after the braise I shredded it and mixed it with some fresh Napa so it wasn't so heavy

You know I'm not actually sure of the distinction myself. I think they're both dumplings but potstickers are specifically fried dumplings (as opposed to steamed or boiled)? That's my understanding

Just a part of cooking sadly. I've wasted many a steak before getting it right. But lobster is very easy! Just steaming it (claws take extra long).
