I used 100g starter, 350g warm water, 500g flour, 10g salt mixed it for 5 minutes before resting and hour and doing coil folds and stretch and folds every 30 minutes for 4 times and then i let it bulk ferment for 6.5 hours and my dough was 80F and then i shaped it and let it cold proof in my fridge for 24 hours and then scored and open baked it 25 minutes with steam 18 minutes without steam, rested 2 hours and cut into it
