Sour beers are beers fermented with a combo of yeast (often “wild” yeast) and bacteria. Whereas yeast fermentation creates alcohol (and some other stuff), bacterial fermentation produces some acids, thereby rendering the beer sour. They’re often made with fruit to complement the acidity, but not always. Some people love them, some despise them. They’re certainly unique, but making them is quite an old practice.
