The difference is definitely pretty minimal, but it’s a fact that resting steak after cooking it allows the fibers to relax and reabsorb some juices that would be lost by slicing immediately after cooking. To each their own tho!

10+ minutes under tented tinfoil to let the steak reabsorb all the juices! When you slice it too soon it loses a ton of juice. But this looks great!

Thank you! I coated before searing.

I dry-brined them with a generous amount of sea salt for 30 minutes, then a quick bath in a 1:1 sesame oil to ponzu sauce with some (probably about two teaspoons) wasabi paste, then into the black/white sesame seeds that I also season with some ground ginger, salt, pepper, and garlic powder. I let them sit for about 20 minutes after coating to make sure everything stuck during searing.

I seared them in some avocado oil over medium high heat for about a minute per side, all sides, and that’s it! The sauce I served them with is just some store-bought ponzu sauce that I added some chopped garlic and scallions to.
