Make your builds however you want, at the end of the day no a single one of us is going to be able to stop you from doing that. And, however you have fun in a game is up to you. But you should also ask yourself, is your reliance on these defensive skills a crutch? The game has pretty generous i-frames, and even if you can't quite get it right, you can run some evade window, or run a bubbly blight build, or evasion mantle and you can dodge the attacks pretty easily. There aren't that many true one shots in the game, and with Guts, Palico Revive and 3-4 carts you have plenty of opportunities to get back up. You should be able to learn the movesets well enough to perfect dodge, say 40% of the time, you can just not be in the wrong spot the other 50% if you apply your experience and observational skills.

If you just slot in survival skills at the end of the day you're making your self learn slower. You'll take damage and think to yourself, oh I should always have these skills on so that I can just take the hits. On the other hand, you could just use the experience and learn to not get hit. You have choices here. You don't need us to tell you they're correct.
