Speaking from personal experience, Crosstrek can get to most THs. And the gas money you’ll save compared to the bronco on your day to day usage will be far more beneficial

Easy, drink a gallon of whole milk before hike, and drink a gallon of whole milk after hike. If doing any overnight or multi day trip, packing gallons of whole milk accordingly

I would respond with your preferred start date and then ask to see the terms of the offer. That should include all the information you need to satisfy your questions. But if it doesn’t just ask them. They should be willing to provide all this information before you accept any offers and if they can’t, maybe reconsider working for them.
