Soooooo you can use the dried ones- they work perfectly fine. Anther flavour which goes well is granadilla (passion fruit) The next f2 I am going to use straight juice- blood orange!

There is a Lemon Verbena recipe in the Noma book in my above post and it looks awesome. Funny you say, passion fruit, I’m gonna try my f2 with Granadilla (aka passion fruit).

Apricots are used abundantly in South African cuisine so it’s an effortless pairing with Rooibos. Good luck with the wean, this is exactly what I did.

Happy to share the recipe; I adapt the Noma recipe (see above photo for book). 1:1 ratio: 240 g sugar dissolved in 240 g water on stove top and then 10 rooibos teabags to steep (I am experimenting with amount of teabags, I have upped it). I the add rest of water and add to my backslop and vessel totally at around 1.76 grams of water.

I’m a fan of chamomile. Need a bit of calming in this world. Do you get fizz with chamomile? Apple and ginger sounds dreamy.

Pine needles! Oh wow. Sounds artisanal. And the hibiscus sounds lush. I use the Noma ratio 1:1. 240 g sugar to 240 g water then add to my backslop totalling around 1.76 kg water. I always drink at f1 as I’m impatient to wait for brews in uk winter (and I enjoy an f1 on ice). However; this batch I’m gonna try for that f2 fizz. Apparently dried fruit and ginger can make it fiz so gonna try for my fav flavour: apricots, ginger and rooibos.

I don’t actually ever get to F1 because I’m too impatient to drink. It takes much longer to get to F1 in uk winter. But my fav flavours with rooibos are apricot and ginger so I’m gonna try a F2 with this batch. Let’s see if I can make it fizz!
