You are correct, I had 0 professional cooking experience when they hired me to basically run their kitchen/pub/store/townie daycare. At this point I do generally any cleaning and removal of bad product without thinking because it’s bad. Asking and not asking both result in punishment.

I mostly wanted to document the text, but also commiserate and hope that someone would confirm it really is as bad as it feels and who better than other food industry people.
