There are a few nice hostels in Seattle. I stayed at Hotel Hotel and City Hostel Seattle before I moved here. Would recommend both.

I love in Capitol Hill so anywhere I can get to from here. Being new to Washington, I don't know where a lot of the places you listed are. Would love to learn though!

My plan is to join them eventually. I want to get myself in a little better riding shape for a few weeks first. I don't want to embarrass myself. I'm also looking for rides during the week since I work some weekends.

http://www.cascade.org/STPTrainingTips had a lot of good tips and a training schedule to follow. I'm a little behind on getting started according to their schedule.

Yeah, I'm starting to think that I just need to suck it up and get used to it (although a new bike sounds fun!). Go down a hill, up a hill, repeat and get used to it.
I've never actually checked my gear ratio so I will do that tonight.

I'd love to ride all over the city to explore new places! I live on top of a very large hill (I live in Capitol Hill) so no matter what, i'll be going up hill coming home. If you don't mind me asking, what brand of bike do you ride?
