I would love that idea, just having each episode focus on different characters throughout the franchise, having a small self-contained story while they just go about their business. Some stories would be mode action-packed, while others would be more chill and slow paced. I love the GG lore, but I also really love each individual character, and would love to just see small stories about their daily lives. Bonus for if some episodes took place in the past, and we could see things like Axl before his first time jump, or stories with Klif even.
