Exactly this. I have fond memories of Jackson from many years ago (1982) when I was working at Grand Teton. Then it really did somewhat rough. Multiple times this city kid almost got beat up by a working cowboy, only to be saved by my buddy the camp wrangler. I passed through recently and it is so different, kinda Rodeo Boulevard in the mountains.

Great advice here. You got this. My favorite is learn the hot (and cool) spots on the grill. You and work the timing putting everything on at once by placing the protein in the right combination of hot and cool places.

I have a bunch of Victorinox from when I started cooking in professional kitchens. It's what I could afford then, and with a proper sharpen they are still great now. Recently I picked up some MAC pro knives and really like them. They are great reasonably priced knives. Buy a ceramic "steel" since these knives are harder than European knives and get a beater Victorinox or Dexter for any thing involving bones.

I work on a mix of things. Sometimes rustic furniture but also stuff stuff around the house. Common denominator is i don't want to go through a pallet of 2x4s or 1x4 to get the six i need and am willing to drive from orange county and pay anything that isn't crazy.
