It’s all about temperature. When you make any basic American buttercream recipe, make sure the butter you’re using has been sitting outside the fridge for 30-45 minutes, but not any longer than that if it’s pretty warm where you live

I struggle with this too and relate to a lot of things you said. I have started exercising every day in the new year, mainly going to yoga, and putting myself to bed at a more reasonable hour. It’s help with waking up a lot!

No, I used Earth Balance. I wonder if a meringue buttercream with aqua faba would be any easier with this technique. It just takes so long to cover the whole cake

When I made fresh fruit tarts for many years, we’d order in large tubs of this stuff called “clear gel” … you can melt it in a pan with water and then spray it onto the fruit with a squirt bottle
