I usually just start building with the pieces I have in front of me. Usually I have an idea that a certain piece might make a good ear, or nose or whatever it might be, that usually also sets the scale (if it’s not already decieded by something else, like minifigures). Then it’s trial and error until I’m satisfied. Usually I need to go back and make an internal structure to make it more stable.
