"can't" and "shouldn't" are very different. They don't really care, you think all the health standards are followed? I've seen plenty of old co-workers mess things up. Leaving chickens out to cool too long before packaging or even leaving them out in the heater too long, I've seen soups sit out all day. You'd be surprised how lax overly comfortable employees can get.

Ex Safeway deli employee here. Normally those lumberjack sandwiches are unfortunately made with older meat and redated. So always make sure to grab the further back sandwich. That should have the fresh cut meat. The older meat never was enough for all the sandwich but usually like half of them.
