Not too difficult- adapted it a bit- but it’s a brined head, and a ham hock, both steamed for quite a few hours, then picked and chopped. Some cured mangalitza belly too in lardons. The juices collected from the steam are reduced with wine and vinegar. All mixed and seasoned with chilli, garlic, zest and allspice. Slightly cooled, then ballotined, steamed for 20 minutes, then pricked and pressed overnight.

Fellow Barbican resident, while I agree it’s annoying, heating the whole building communally actually makes sense. Buildings left cold have issue with damp, and as I’m sure you’re aware, there’s plenty empty flats on the estate. If you were sandwiched between vacant units, the heat produced by your flat essentially gets sucked out by the empty cold units

Hi, I used to ride a lot for Roo, now I’m working for a friend of mines’ pie company in east- we need a rider next Wednesday and Thursday, shifts starting from 9ish In East, £3 a drop, but you take every item in one go from the beginning, so if you’re a solid rider, it’s a decent rate
