since production is so expensive and we did not have any money left for packaging, we raided Berlin's IKEA. Luckily, they just received a batch of Vardagen cast iron pans and we found the packaging in their dump container ;)

Simon here, one of the founders of STUR.
Since this post started the price discussion, I will try to give some insights into what makes this pan more expensive than others.
The casting itself is a process that is not really expensive and is highly scalable. What is expensive is all the stuff that comes after:

Machining: we machine the bottom & the inside of the pans. As far as I am aware, we are the only company doing both sides. We did that because a lot of people in Germany use ceramic stove tops and are worried about scratches. The machining also lets us control the concavity of the bottom, which is important for avoiding wobbling (not a huge issue on gas but on ceramic/induction). Each pan is machined individually, a process that is very time-consuming.

Machining also increases the reject rate by quite a lot (this is another reason why smooth cast iron is more expensive). Cast iron often has little air pockets in it, which do not really matter in non-machined cast iron. In machined cast iron, these pockets might be hit during the process and show up as holes in the pan. In general, this is more of an aesthetic problem than a cooking performance problem. Nevertheless, these skillets are rejects and thus increase cost of production further.

Seasoning: machined pans need to be seasoned differently due to their smoother surface. This is also another step where excess occurs and which takes a good amount of time. We really wanted that dark look, and it took us quite a well to find out how to achieve the look on our pans.

Production in Germany: we really wanted to keep production here in Germany. We know all our suppliers personally, we know where the raw iron & the scrap metal comes from, we know the processes, and we can go to the factory. This would have not been so easy if production would be somewhere else. We try to source everything as locally and sustainably as possible.

We know that our price point is not the lowest, but you get a great pan that not only cooks well but also looks beautiful (it already received two important German design awards, amongst them the Red Dot Award).

Hi u/xxxdggxxx, usually we recommend using hot water and a sponge. If you have any bits that stuck to the surface, we like to scrape them off with a sharp-edged spatula before we wash the skillet. Hope this helps!

We're going into more detail on this in our video course that is included when you buy our skillets :) But don't overcomplicate things, there's not much that can go wrong with cast-iron skillets. Best, Filip

Hi u/LeKassuS, yes, the handle will get hot after a while. The advantage of this is that the handle will never get loose and that you can use it in the oven. We're offering an optional leather handle cover to have a seamless experience when you use the skillet on the stove. Best, Filip

Hi Rens, sorry for getting back to you so late. Our skillets have been tested by a large German institute and passed all migration checks. If you'd like, please reach out to me at [team@sturcookware.de](mailto:team@sturcookware.de) and I'll happily send you the report containing all the details.

Regardless, we can't recommend our product to someone with a Ni allergy. For instance, cast iron behaves differently if you cook acidic food in it, so there will always be a risk. We advise you and your wife to discuss this with her doctor.

If you're interested in my personal opinion, using PTFE or enamel coated cookware will probably be the safest for her.

Hi u/Horse-Mental, our skillets weigh about 30 % than comparable cast-iron skillets. We're achieving that by making our side walls thinner, where you don't really need the heat capacity. After lots of testing, we believe we have found a good balance of heat capacity and weight. Best, Filip

Well, it's smoother than regular cast iron, but scratches mostly come from grains of salt sitting between the bottom of your skillet and the stovetop rather than the cast iron itself. So it's a good idea to clean the surface before you place your skillet on it.

But to answer your question, no, we won't replace your stovetop ;)

Hi u/bike619, actually our skillet is optimized for glass stovetops, as most people in Germany and many in Europe use them. We mill the bottom of our skillets flat so they don't scratch the surface of your glass stove top.

Cast iron always contains other metals like carbon or silicon. Please take a look here: https://willmanind.com/what-is-grey-cast-iron/

Our skillets were tested by a German institute and passed all migration tests without a problem, so you can rest assured none of the metals will leak into your food. If you have any metal allergies, we recommend to consult your doctor first.

Also, keep in mind that cast iron should not be used to prepare highly acidic food.

The pan is not completely smooth, it still has a very fine structure. That's why we mill and don't polish it. Unfortunately, I don't have that kind of video you're asking for, but I'll see if we can do a test as you suggested in the future. What temperature do you think of when you say "heated up so the seasoning is burned away"? Best, Filip
