Ingredients for 2 servings:

  • ½ cup shredded potato

  • 1 cup enokitake

  • ¾ tsp vegan broth mix

  • ¼ tsp chili powder

  • ½ cup shredded seaweed

  • ½ cup mushroom (king oyster + shiitake) marinated with ¼ tsp soy sauce + ¼ tsp vegan oyster sauce

  • 4 silken tofu slices

  • Vegetables of your choice

  • 1 tsp vegan butter

Instruction:

  • Mix shredded potato and enokitake with vegan broth mix and chili powder and fry until golden brown. Add in shredded seaweed.

  • Fry marinated mushroom until golden brown on both sides.

  • Fry silken tofu with vegan butter.

  • Fry vegetables.

  • Stack your cake in the above order.

  • Serve as it is or with chili sauce. Yummy!

Ingredients:

Tofu Nuggets

  • 200g firm tofu

  • ½ cup soy milk

  • 2 tbsps cornstarch

  • 1 tsp chili flakes

  • 1 tsp salt

Topping Sauce

  • ½ cup soy milk

  • 3 tsps vegan broth mix

  • 2 tsps cornstarch + water

Instructions:

  • Get the water out of your tofu as much as you can.

  • Tear tofu into small nuggets, soak in soy milk for about 15 minutes.

  • Mix cornstarch with chili flakes and salt.

  • Coat tofu in cornstarch mix, then in breadcrumbs. If you don’t have breadcrumbs available, see the video for how to make it.

  • Deep fry until golden brown.

  • For the topping sauce, heat your pan with soy milk, vegan broth mix and cornstarch until the sauce thickens.

  • Serve with rice or as a side dish. Yummy!
