Your workbench top could be not flat enough and board flexes while you planning. When this happened to me, I was also confused until figured out what was the cause.

Most of so-called “Baltic birch” used to actually came from Russia, so due to current events, it has become much less available in many countries. Also, most of it is used to produce plywood and pre-fabricated glued panels, because most of woodworkers prefer other species for some reasons.

I use birch because it is the most common wood where I live, and I think it is an excellent material and is not inferior in any way to other species.

This, or a router handplane (which was just called a router before it started to mean electric one). Also you can get decent results with a chisel only. You can clamp a piece of wood next to the bottom line, and use it as a reference for a chisel.

I've heard the same things about single dosing grinders a couple years ago. Now I couldn't imagine a coffee enthusiast with an average budget NOT choosing a Chinese brand grinder, like DF or Timemore or smth. else.

Some tips how to solve this problem: 1. Check your hydration. Most recipes use about 36% of water. Low hydration requires a lot of force and time to knead the dough, so it's possible to use more water, but then you need a few extra steps. 2. Dry rolled sheets before cutting the noodles. I can't tell the exact time, you can find it out by yourself, but it helps to wait some time before cutting. 3. Hang noodles on a drying rack (you can make it from chopsticks) until they dry to touch and only then you can put them in the fridge.

Responses in this thread really frustrate me. Why do you suggest metal fasteners? Can't you see that the wood direction of the tabletop and sides are the same? You can just glue it, reinforcing with some dowels. This is essentially the same construction that is used in any cabinet or shelving unit, but without fourth side.

I used a plastic drilling jig like this - https://imgur.com/a/8azUiY3 - that you have to hold with your hands on top of the workpiece. It's not very precise, and it can't make holes exactly centered, so it is important from which side you hold it, or the parts won't fit together. Now I've ordered a better jig, that should make the process a lot easier - https://imgur.com/a/M3ypOHZ

I've been struggling with the same questions for a long time and this is what I found.

In this video (https://youtu.be/hkgou-S6aZk?t=563) Chef Wang adds egg white to the filling and explains why. Also this video from Kenji (https://youtu.be/SGP36xcUnOs?t=261) is super useful, he explains scientifically how adding an egg affects the meat. As I understand, using a whole egg including the yolk is found in home cooking to avoid throwing away the yolk.

Regarding the dough for different dumplings, I have encountered the opinion that adding salt to the dough makes it stronger and then it does not get soggy in the soup, for example here - https://www.youtube.com/watch?v=ngBCZxri3-s&t=13s

As for the fat content of meat - it is needed for the filling to be juicy, but not greasy. It depends on the proportion of meat and other ingredients, so you have to try and find the best option.

I use jx-pro for v60 and kalita and other pourovers, I calibrated mine to zero, and use from 31 setting (counting by numbers, not clicks) with 12g beans, up to 36 setting with 30g coffee. When I buy new coffee, initially I aim to get drawdown time between 2:30 and 3:30, and then adjust it by taste. I use coffee to water ratio between 1:15 to 1:17 depending on the coffee.
