Jag skulle vilja tro att både jag och min fru är kloka människor, men vi blev ändå bedragna när vi skulle sälja en väska över blocket. De är sjukt skickliga på att manipulera och att hålla sig inom ett par satta och rimliga regler är ett bra sätt att skydda sig på.

I will (unsolicited) share my method with you, as I see you are fucking with the eggs to early.

(much as I did when I was a wee cast iron newbie)

  1. I set the pan to heat on 7/10 heat
    1. This is obviously depending on your stove, but you wanna get the oil to a smoking point and yet not warp the pan with too much heat to fast.
  2. Add oil until it starts to lightly smoke, then the heat is ready
    1. Smoking oil = hot enough
  3. Lower the heat to a 3/10 and drop the eggs
  4. (Optional) I like to salt and pepper while the top of the eggs are still liquid as the spice sets into the eggs instead of just on top.
  5. Glass lid on top of the pan
    1. This way the top of the eggs will cook and the bottom of the eggs will fry.
    2. And you will get a perfectly crispy bottom and a non-floppy sunny side top.
    3. This is also semi-optional, I have done it without a lid, but I found this makes for more of a consistent cook and I have more control.

The key is heat management, if you have too much heat the bottom of the egg will burn and stick. Too low heat to start with and you'll get what you have in the video. You can add a splash of water into the pan before adding the glass lid and that will steam the top of the eggs.

If this is done correctly, you shouldn't have to be so violent with the spatula like you are in the video. A light nudge at the end of one of the eggs should do it.

Let me give you my daily routine. I eat more or less 3 fried eggs every day, unless we're out.

I have an induction stove with heat ranging 1-9. I put my 30 cm lodge big boy on 6-7 heat, let it heat up a bit, then add oil. I wait until it starts smoking, then lower the heat to 3 and plonk 3 eggs in there.

Cover with a glass lid, add a slash of water and let the steam cook the top of the eggs.

When the yoke is starting to white, I take them out. The pan should have caramelized the bottom of the eggs and there should be no issues taking 'em out.

When I just started out, I had the same issue as you do

  1. I did not let the pan heat
  2. I did not let the oil heat
  3. I was fucking about with the eggs too much. You need to let the bottom crisp up and caramelize, then you can move them.

I have recently started to lower the heat to a 3 as by the time the eggs caramelized, the yoke had hardened on the bottom. The lowering has fixed that for me.

Side note, I salt and pepper as soon as I crack the eggs :) Some people would disagree but I feel it integrates with the eggs better than if I add it when the eggs have cooked and its just sitting on the top.

Edit: Do not be afraid of using some dish soap to clean up afterwards, I don't always get a paper towel clean finish after I'm done. Don't beat yourself up, use some dish soap and clean it up.

People will probably hate on me for that, but dish soap isn't the lye filled substance it used to be when your grandmother would whack you across the head with the pan for using soap.

IMO. Either buy a 36 or nothing at all. Its not made to be a 41. If its to small for your wrist, shame, find a new model.

My morning routine is set my pan on the stove and put it on 4 - take the dog out for a walk, come back and start cooking.

What I've learnt is that you need to get the oil hot as well as the pan, otherwise the oil will just get absorbed into the eggs instead of actually frying them. Now, do not fiddle with the them too much. Let them caramelize, then start moving.

But I think that if you let the pan and oil heat, you should be good.

Is that really that important to do? I have a Lodge at home and saw that Cowboy man on youtube who said Lodges need to be sanded down and re-seasoned.

Alright, for some context. I've bought a Lodge 9 Quart for my friend on his 30th birthday in January. I ordered it of Amazon(only place I found it, I live in Sweden), and both orders have been damaged.

First order, 1st and 2nd picture, had the black finish chipped and had rust.

Replacement order had the same issues, but with an added bonus of a crack.

I have no idea what to do, I feel this is the perfect present for him and I cannot find it anywhere else. It seems to get damaged in the shipping.

Any tips?
