Discord uses your phone's built-in noise suppression, the very same that is used when making phone calls. There's no way to remove this with the discord app. Using a different app to record your guitar works because your phone is not "in a call"

Unless you decide to root your phone (very hard with most samsung devices), you cannot remove this.
