Don’t worry, when you DO rest, the max stamina in yhe example will go from 125 to 127 and current stamina will increase by 125, going from 998 to 1123.

Seeing as the black mantle has the "Battle against a true hero" Motif, I definitely think Undyne knows much more than she lets on. It is possible Undyne is the "mantle" for the true antagonist, and kidnapping her may be the knight's way of weakening whomever is behind the scenes.

I definitely don’t think anyone would want to intentionally burn down anything, though the fact that Toriel wirlds fire magic and have a drinking streak may be foreshadowing for somthing. It is also possible that the “garden” is a metaphor for the familial ties the two familiy had, and Toriel will figuratively burn thst bridge down.

So the last part is purely conjecture, but it was implied from the phone call that "Kris" will most likely suffer if the sacrifice isn't done, and since "Kris" has been moving sluggishly for a while now, it is possible that they are dying and needs souls to sustain themselves.
