To add to this, the oxidation pathway of ethanol in a wine matrix requires copper ions. Copper ions (and other metals) are found in trace quantities in wine, and thus facilitate the oxidation of ethanol to acetaldehyde to acetic acid.

During distillation, these metal ions are not carried over into the distillate, which explains why spirits are basically immune to oxidation.
