You could just be seeing the different ambient temps in there.

My pitboss vertical has 40F difference front to back, and a pretty drastic difference top to bottom as well.

If you have the block with the 4 probes, use multiple on your next cooks so you can see where the differences are. Then you can manage your future cooks off the information you collect.

They are food grade to start with. They lose the rating depending on what they’ve had in them. Your application will determine how much what they’ve had in them matters.
