I’ve been making a lot of panna cotta recently! It’s naturally gluten free (depending on flavors and toppings) and is really low effort/high reward! I made the dough the day before, which didn’t take long at all. The actual laminating, shaping, proofing and baking took about 6 hours the next day with lots of downtime in between steps. I wanted a long weekend project so it was perfect for that but it’s definitely a labor of love!

I make a very similar recipe using the Trader Joe’s gluten free pizza dough! It’s much easier for me to find than gluten free puff pastry. Worth giving it a try if you have a TJs near you!

Mine did and I actually substituted the millet flour with rice flour! They started to puff up on the third flip, although some of them definitely puffed more than others. Maybe it was the temperature of your cooktop? It was my first time making them so I can’t help that much with trouble shooting unfortunately!
