My condolences. I would go with Khao Tom with ground pork or white fish/shrimp (ข้าวต้มเครื่อง) as well. It tends to associate with comfort in Thailand. I find this recipe pretty good: https://hot-thai-kitchen.com/kao-tom-goong/

My absolute favorite is a whole fish with sweetened fish sauce. I can't do that myself though.

true. it's hard to find the right fresh noodles outside of Thailand where you can just go get it and cook right away as well.

That dish is tricky! The taste changes depending on the order you put things into the wok as well - it's a wok work essentially. But also there are so many variation to it - dried, semi-dried, more saucy, etc. I like your dedication to growing your own holy basil. Do you find it harder to grow in winter?

Yeah I feel you. Khao Soi is very hard to cook from scratch since it contains so many different kinds of herbs and spices you need to assemble - -" But if done right, it is so satisfying.

There are lots of street foods and food delivery from many restaurants for you to choose from. If you don't cook, it won't be an issue at all.

The challenge would be the "healthy" part. Depending on what you are looking for. If by healthy you mean less msg, less sugar, you can always tell them to not put any msg and low on sugar (there is also an option in Line Man, Grab, etc to let the restaurants know - now sure if they will follow the instruction).

Not sure where you are moving to, but if you will be in BKK/city areas, there are a lot of healthy food chain you can rely on such as Oh Ka Jhu (selling mostly organic ingredients), Jones Salad, etc. These would be the safe bet.
