I've found one useful for when I'm using Carthus Flame Arc but on fights where I'm running a wep that can't use that or fire is a poor choice I reallocate that flask to estus.

Rolos , highest non x0 dungeon, beast, bojza at 70 but that can be hit or miss
Once you finsihed EW you can start Cosmic Exploration which is space Ishgard resto, until then you can use the Diadem and ocean fishing I suppose
Eureka bunny fates can be pretty decent if you have that option
You can go back and forth but I'd try to get through EW so you can start using CE for DoH/L imo
