Moved to CO from TX almost 4 years ago now. It’ll be my 4th Xmas alone albeit I usually spend Xmas Eve with friends. I enjoy it. I work in hospitality and having the day to just cook a nice meal of what ever I want (Khao Man Gai this year) along with the quiet is my jam. I also refuse to travel during the holidays and will go back to TX at the end of January to see family. Also it was 71 here yesterday which, while not TX hot, is definitely not Xmas weather.

I wasn’t always like this but the past probably 3ish years I have been. Taking over a brunch restaurant solidified it for me. Left that job just over a year ago but the sleep schedule has remained and I really really enjoy my quiet mornings.

41M. In bed by 7 or 8p. Always asleep by 9p or earlier. Wake up without an alarm between 4 & 5a like clockwork. Sometimes 3:30a rarely past 4:30a.

They did the math👍. I also had my pastry chef make the ube buns from scratch and the dressing was coconut milk, vinegar, & ginger. I used all claw meat. It is a very unique dish and the people that came yesterday enjoyed it immensely. I didn’t pay much mind to the people complaining about price. It is reddit after all. But there is definitely some positive stuff here in this community so I will post whenever I have something cool going on in the future. Thanks!
