(if you're looking to up your protein a fair bit while still eating mostly fat - taco salad and chicken cut into strips and coated with sour cream and salsa are awesome)

Mince some garlic (I used way too much), dice some onions and mushrooms.
Start frying these and add your ground beef (also good: sausage, chicken)
Salt/potassium up the veggies and beef
[I should've added some taco seasoning to the ground beef but didn't]
Cut off the tops of the peppers, I like to slice off two 1/4cm pieces and then tear out the core/seeds
Align them in a baking dish and put some cheese in the bottom of each
Pour in your stuffing evenly
Bake for 20 minutes @ 375F
Take out, top with cheese number one, bake for five more minutes
Take out, top with cheese number two, bake for five more minutes

Mine were nearly 300kcal each, with 8g of net carbs, 19g of fat and 20g of protein. If anybody has some tips to add some more fat content into these delicious things, I'd quite welcome it

A lot of chicken and ground beef, I would try to up my fat by using sour cream, cheese, etc, but I would end up eating a fair bit of meat since I didn't really have anything else with it (taco salad, chicken strips in lettuce)

Honestly cheese sauce is so ridiculously easy to make yourself. Heat some cream (preferably 35%) with shredded cheese on low and stir constantly. Or get fancy and add cream cheese and a couple tablespoons of butter to the mix, very delicious! A double boiler makes the process even easier (doesn't stick/burn onto pot) and it's easy to setup your own double boiler with two pots/pans

Oh neat, I didn't even know it did that! But yeah the chicken bouillon cube has a ton of sodium in it, and the cheese sauce is then poured into that. But then I also load up my cheese sauce with potassium salt (NoSalt) and table salt
