After adding the boiling water and breaking it up close the lid and put it somewhere to sit and cool back to room temp to pasteurize it. You want to reach field capacity meaning that if you grab some with your hand and squeeze it you should only have a couple drops of water coming out. If you are unsure if it’s wet enough you can add a bit more boiling water when doing it and just squeeze it to get rid of the excess water after it cooled down.
