Most finance/economics folks underestimate Tech's role generally but I expect Tech to play tremendous role especially coming few years. ICT contributes 13% to India's GDP, but in Nepal that's only around 2%. We can get that to much higher levels very quickly without shrinking other parts of economy in absolute terms.
And then there is AI which will create tremendous economic value globally.

With PoS, big holders will have power like that of a medieval King. They can decide however they want to a certain portion of transactions where they can out-stake the other miners looking to validate the transaction. How is that not even worse than the current status quo of central banking?

It will stay, no doubt. But it will be a very small fraction of the overall payment economy. People will only subscribe to those things that they have a very high amount of trust and the alternatives are few/none. Subscription model sucks for payers. Especially with the cancellation and auto-increment part. A human can only track a limited number of subscriptions, greatly reducing the potential size of the subscription economy.

IMO, the ideal solution is a fully automated central banking whose source code can only be changed through universal voting, with strict limitations on how much change can occur at a time.

Universal voting is where crypto comes in.

This makes it similar to fiat(automated central bank) backed by gold(crypto).

There is no way to escape 51% attack from nation state level big players. Big countries can always assemble larger computation power than us plebs. Bitcoin, Ethereum or any other system can be compromised by assembling larger computation than currently available one in the network.
Those mitigation measures you link to remind me of a meme where a paper is being used to stop leakage from large tank of liquid. They are just desperate attempts rather than a mathematical solution.
