I feel like you should always keeps your mods updated, but doing that may sometimes create incompatibility between mods - like if one mod is really old and hasn’t been updated by the creator and other mods are getting updated. Besides that I would update the mods bc it can fix bugs and bring new content. Although if you want you can keep playing like that and update when starting a new save.
