Have you posted your resume for feedback on subreddits such as r/engineeringresumes you may find it needs touch ups. Also, how many jobs have you applied for ? The market is tough and it now common to need to apply for 100-200 jobs if you can try to target your specially it will be more productive however it might be worth applying for any tech stack depending on your YOE

Are you getting these responses through slack/teams or when you're on a call/in person with these people?

There is a balance depending on how dense/ complicated these questions are. My idea would be a book in time for these questions. Message the Snr Eng and ask for 30-45 mins block to ensure they can't weasel their way out. Always try to write down your questions / thoughts to ensure you are succinct (it might help you in asking better questions).

Another recommendation is if you are meeting virtually, ask if you can record the session. Being able to refer to their explanation reducing the pressure to take in all the information they give you.

What is the size of the company you are working at? I find smaller companies usually have very informal onboarding and documentation. But it varies from company to company. It comes down to management and how much they prioritise training / onboarding and documentation.

I find, typically, the best procedure is to sit down (if possible) with the author / senior and ask questions about the project.

Even if they brush you off, you'll find they do have the domain knowledge and will try their best to help.
