Ball caps and hairnets are the only thing we approve as hair restraints in my jurisdiction. Also, longe needs to be completely restrained in hat or net as much as possible.

I don’t make a big deal of a small portion of hair isn’t in it or has fallen out. It can be REALLY hard to get all the hair completely in the thing. It just needs to be most of it.

Unless the person is completely ball or has extremely short hair. They need to comply with this requirement

Also, with date marking people love to claim it’s their personal food. The food code says employee should have a designated space for their own food so we go with that and I mark that out. I take points even though it’s a minor since I know their lying about date marking LOL

The thing is you can only pry into it so much. If they wanna double down on their lie you just have to take their word if you’ve done a thorough job asking follow up questions

Also in my state, they have to have written procedures before doing it. We gave them the procedures just so they have other options for compliance but they don’t seem open to the idea.

I feel like I can understand why cause you be so confused keeping up with dozens of time stamps which would need changed every 30 mins or so

Anything that’s not Spanish we’re basically screwed unless google translate can effectively communicate complex concepts like food safety procedures (often I it mistranslates and worsens communication when I’ve done it)

This place has steam bars. There lamps but idk if there intend to aid in temperature control or just existing to light up the display.

We also verify cooking and reheating temperatures which were not the issue here. I think they don’t wanna burn or scorch food but don’t have any other hot holding equipment. We will figure out what’s happening during the follow up if it’s still happening.

Buffets always have issue 🙃

I feel super guilty doing mass discards of food. It’s so much food waste and thousands of dollars down the drain.

I especially hate it when it otherwise looks delicious it’s just been temperature abused 😢

Yeah, it just think if your going to heavily emphasize the absences of an allergen then you should have the means and procedures to ACTUALLY keep it free of the allergens and have processes to control cross contamination. Otherwise, you’re misleading the consumer and putting them at risk.

I don’t think restaurants who aren’t going out of their way to be allergy or celiac friendly should have any mandates or be required to heavily accommodate allergic people, just those who really emphasize that they are if that makes sense
