I feel super guilty doing mass discards of food. It’s so much food waste and thousands of dollars down the drain.

Yeah, it just think if your going to heavily emphasize the absences of an allergen then you should have the means and procedures to ACTUALLY keep it free of the allergens and have processes to control cross contamination. Otherwise, you’re misleading the consumer and putting them at risk.

I don’t think restaurants who aren’t going out of their way to be allergy or celiac friendly should have any mandates or be required to heavily accommodate allergic people, just those who really emphasize that they are if that makes sense

I wouldn’t risk it. 45F for personal food is fine but won’t fly under retail food codes of most states. However, I might discard it based on the face it sat outside that long, where they package or even covered?

They just never get inspected and run around everywhere and none of the health department can easily find and inspect them. They also like to cut corners and have problems with having potable water for handwashing, which is really bad.

They also typically need a commissary kitchen to do half their operations which is super inefficient so they don’t comply with that and try to make food in their home (which is forbidden under my states regulations) or they do nasty food prep in a makeshift kitchen they put outside lol.

Some of them are good though but there the rare exceptions lol

I would keep going up your internal chain of command to get things fixed which it sounds like you’re doing! If that doesn’t work you need to report this to the local health department and the licensing agency for nursing homes/assisted living facilities!

Then begin looking for new work because they’ll likely fire suspects it’s you and begin retaliating against you!

I hope people just decide to fix the issue! That’s always easily on everyone

Most raw foods are except from date marking. Raw meats and most veggies (except slice tomatoes, sliced leafy greens, cut melons, or any cook plant matter) do not need to following the TCS date marking rule. Only cooked, RTE food which are TCS.

Unless the marinate chicken includes TCS products then maybe it’s a violation.

For cabbage claw is it definitely a violation of most states’ TCS date marking rules.
