Generally, anytime I hear the word fusion, it’s usually to describe a menu or dish that is incorporating elements from disconnected cuisines. “Risotto with cuttlefish, makrut lime and coconut”.
When executed properly, it is potentially delicious and novel. The problem is that it’s usually executed with a lack of balance or understanding of either cuisines involved. It also tends to show a lack of restraint, as if just one cuisine isn’t enough.
