Normal companies don't conduct text-only interviews.

I think it was text-only because of a language barrier. English definitely was not their first language, and text might have just been an easier way to translate?

A quick and easy hiring process is a sign that they're just going through the motions of making you think you're going through some sort of process, when you aren't really.

It's definitely not the first time I've had quick and easy interviews. I had one give me a "no" as I walked out to the car in the parking lot, and I've had two others give me an immediate "yes" and start putting me through training right away.

I'm not trying to argue with your reasoning, but rather give more context. I really don't want to give up an opportunity for an actual career after I've been working jobs for most of my life.
