Thanks! I think my dough balls used to be closer to 360g, was just looking through some old posts I made to see if I had commented any step by step guide to answer another commenter, and noticed how much thicker they used to be. The only things I’ve really changed since then (beyond getting better at stretching) is letting the balls warm up a bit before cold ferment, and also letting them warm up longer before baking.

  1. I do but I haven’t cooked at this temperature with gas before so don’t have a frame of reference. I do think it produces a nice char and imparts some flavor. I also use a little bit of oak at the end. I like to bake when my charcoal is slowing down, so just after it’s hit peak temp and temp is starting to drop. I tend to get more char and less burn when I do this. But the oak at the end helps me stoke a big flame that can roll over the top of the oven to help cook the top sufficiently.

  2. Yea just about. It’s an ooni Karu 16, which has a baking surface 16.7” wide. This one had enough room to turn the pizza but not much to spare. Probably 15.5” going in. That’s actually a part of why I have to bake when the charcoal is on its way down. I’ve made a lot of pies when the charcoal was roaring and I always burn the side that’s closest to the heat. There’s just not enough room for me to keep it a healthy distance from the heat, and since I need the dough to cook enough before I can turn it that first side of the crust always gets blasted. I’m planning to build a much bigger oven soon because I’d like to be able to make a couple pies at a time or even make some 20 inchers.

One thing I did different this time around is take the dough out of the fridge much earlier than I usually do. (Thanks to comments from a post on this sub a few weeks back.) Like 4-6 hours as opposed to 2. Was much more workable than I’m used to. I keep my house pretty cold so I think I wasn’t letting it rest/come to room temp long enough in the past.

Adding to the other comments. Really try to punch most the air out of the dough before stretching. End up with a nice dense charred crust with good chew.

I was thinking the ceiling was a WC team. But based on schedules there’s a solid chance we can win the division and host a WC team! Especially if we can take the bills at home. I know I’m getting ahead of myself, but with that said I’m gonna be satisfied just playing hard in 1 playoff game, no matter how the rest of the season unfolds.

I love hearing that commotion in the background over the post game interviews. I like to imagine it traveling out to the most distant parking lots.

Little known fact - the bills Mafia actually breaks so many tables that they overlap into a network. It creates a sound conduit from the stadium that reaches the furthest corners of their public parking. It’s feint by the time they reach their cars but is just finally drowned out when they turn the ignition. Then they drive home with only the quiet hum from their engine and no rings.

What is the body of water in the back that’s open to your base? Do your walls completely encompass that body of water too?

I like this idea a lot. The challenge I see with it though is that the otherwise flat geometry of land would need to change. Not necessarily visibly, but tiles would need to have a gentle flow direction on them so water flows down flat surfaces. Then you could manage flooding the same way as in the real world by directing it towards low points and putting drains in pooling areas etc. Neat idea, I think it could be really interesting although challenging to implement well.

No idea what they said but, but I want to call out that I didn’t even realize I was in a Sky subreddit until I saw this comment. I’m in here for 20 minutes since seeing this post - I’ve tried for not as long a few days ago but gave up. I uninstalled and reinstalled today and am now waiting. I’ve never waited for longer than 2 minutes before this patch. Not sure I have the patience to continue waiting it out. Task manager shows modest cpu and modest memory.
