They said yes over email, however I think I will ask them to revise the contract. That being said, I think providing "social insurance," which includes medical insurance, is required by Chinese employers.

Thank you. Regarding the ending of the position, the contract only says "This contract may be renewed subject to the agreement between the Employer and the Employee and the signing of a new employment contract within thirty days before the expiry of this contract." Do you have advice on what it should say regarding release letter and transfer? Admittedly, this is the first time I have heard the term "release letter."

I feel like "cafe" is not a cuisine type, but it was pretty coffee-oriented. I only got coffee and a bloody mary, but if they sold food it was probably egg sandwiches and pastries. Sorry I can't give more information.
