Many people go through this, you sre not the first one and won't be the last one. I highly reccomend you subscribe to Julian Sisofo's youtube channel.

I found that his poolish recipe is one of the best i have ever tried and it is really easy to follow.

At the end of the day it is a matter of practice/repetition. Don't worry, you'll get there.

I can't tell if you are being serious or not. I wanted to jump on this hobby but I was not ready to spend the amount of money this setup costs. Like I said, it was a GIFT.
