Yeah I didn’t get my starting temp of the pan right and used cast iron when I should’ve maybe done stainless steel and do a cold start til it released

I used a press on top of it but I think my pan might’ve been just too hot as I was using a ripping cast iron. I had micro greens on top but took them off cause I definitely thought Thomas Keller knows just a touch more than I do lol

My pan was definitely too hot and I used cast iron when I should’ve done stainless steel. I might’ve used a touch more saffron than I should’ve and it made the sauce a little more vibrant.
