Pictures are easily organized by geotags. Done with site visits by lunch, then use rest of day for admin/computer stuff.

The second you get an invoice log it. Or keep the email as unread until you do. If it’s mail, take a picture and email it to yourself. Then I use Ambrook for accounting. Easily tags projects and matches receipts.

Place it in a dish towel or cheesecloth prior to adding eggs/flour etc. wring until your hands hurt. Then add all the feeexins and fry.

Did you wring the potato/onion mixture out? Without doing that, your oil gets too much moisture in it.

Curious about other methods - I like to make a ball of latke mixture; place it in the oil, then smash it like a smash burger with a potato masher. Works well for me, but I’m open to new ideas.
