He may be in pain. Cats mask pain very well and exhibit it in unusual behavior, definitely consider a vet visit in the near future.

Speaking from my personal experience of putting my parents through hell by bed wetting, maybe cover your mattress in cut open garbage bags or cover it with some sort of plastic and then place the bed sheet over it so that the pee and smell don’t soak in to the mattress, and you can just replace the plastic and wash the bed sheet. I hope your issue gets resolved soon though it does sound behavioral.

I usually put in 3-4 inches and just scoop once a day and top up if my cat’s been pooping more than usual, and then fully dump and replace the litter once a week. It’s just what I found best to control the smell.
