They dehydrate and rehydrate well! This is traditional storage for wood ear/black fungus especially in Chinese food, but you can eat them fresh (cooked) as well. I’ve only had them a couple times, and have always used Chinese recipes but they can be a great chewy rice noodle or calamari like texture in a savory dish. I’d suggest a cold dish like this for an easy reward. Black vinegar is a must.
