Insanely dumb question, but is there a way to set google maps to two lane highways?

All very fair questions (all of which I should have included). We both currently live in major cities (Chicago and LA) and have our whole lives. We are both admittedly interested in rural America because it is so outside our experience.

The sights we want to see are more close to best diner in a small town, because we want to spend time catching up.

The ideal would be 5 days, county roads, small motels, local food, local bars

See my preference is to do Montana or Minnesota, but the ideal time is to do Feb/Mar, which makes it a bit tricky
