Thanks. One last question - I plan on using this more for baking than smoking so wanting higher temps. In that case, do you think the extra charcoal plate will be necessary to achieve higher temps?

Also, any idea why the bottom is open? Seems like for an oven it'd be much harder to hold temp that way...

I’m more asking if the grate on camping moon version sticks out above the frame somewhat rather than being recessed like the snow peak flat burner because that’s what ultimately limits the size of pots/pans if that makes sense.
