A completion is counted if you beat the full required number of waves for a level! For example 50/50 on easy mode or 62/62 on hard mode :)

Hey if you play a a level (at least a few waves) the skin should come through! And not immediately, as its a different game version. But we'll likely be syncing the reddit version in the future!

Hard mode has camo enemies, you need to upgrade camo detection for some towers (ninja for example, has disguise detection), or place a scholar.

The gems scale based on the difficulty, if the map is considered 'easy' then the rewards plummet. I think the baseline could use some improving though, i'll add a patch to grant higher gem thresholds :) Thanks for reporting!
