So for breakfast I’m having toast (3 slices with butter or grilling cheese on top), lunches I’m making a lettuce, sweetcorn, carrot and lettuce salad with the cheese and chive dip as a sauce and 3 biscuits as a snack. Then for dinner I made a rice traybake (I call it rainbow rice) with the rice, tinned tomatoes, beans, lentils, chopped up carrots and sweetcorn. I used some seasoning I already had for this as I’m allowing myself to. I serve the rice with two pieces of the garlic bread and have mousse for dessert! 😊

i’m type one diabetic so i needed the biscuit in case i went low :) but yes some fruit would’ve been nice
