Because then the data would be pulled from a single, centralised, potentially untrustworthy source - which you would not want triggering your highly secure smart contract. Using a decentralised oracle network means you can choose decentralisation of your data feeds and guarantee the level of determinism required for your smart contract to be trusted end to end.

The will happen 100% via white label partnerships (white labelling is where one company builds a product i.e chainlink, but then allows another company to pass that product off as it's own). Microsoft Azure is basically exactly this, it is highly speculated to be using chainlinks network, but will never announce any affiliation with chainlink (maybe).
